Aubergines stuffed with Italian goodness.

  • 2 aubergines, £1.40

  • 1 onion, 15p

  • 3 garlic cloves, 20p

  • 1 chilli, 10p

  • 10 cherry tomatoes, 50p

  • A handful of tinned olives, 30p

  • 125g mozzarella, 75p

  • Dried mixed herbs, 10p

  • Fresh basil, 10p


  1. Begin by heating your oven to 200 degrees and slice your aubergines down the middle vertically. Then scoop the insides out, leaving a border of about 1cm of flesh in the aubergine (top tip: it's easier to cut the shape that you’re going to remove with a knife and then scoop it out).

  2. Drizzle the aubergine skins in oil, rub with mixed herbs, cover with foil and bake for about 20 minutes.

  3. In the meantime, chop your aubergine flesh and put it aside while you heat up a frying pan and cook your chopped onion, chilli and garlic. Then add in the aubergine flesh and cherry tomatoes (halved).

  4. Once the mixture is cooked through, stir in your olives (chopped), mozzarella, basil and any extra seasoning.

  5. Once your 20 minute timer is up, remove the aubergine skins from the oven, spoon the mixture into them and drizzle with a tiny bit more oil. Place them back in the oven for another 15-20 minutes until they're golden brown.

  6. Tuck into your #budgetbites.
