WTF is this recipe!?

Halloumi and portobello burgers with roasted baby potatoes.

  • 2 portobello mushrooms, £1

  • 2 slices of halloumi, £1

  • Half a pack of baby potatoes (375g), 23p

  • 2 brioche buns, 45p

  • 2 lettuce leaves, 10p

  • Olive oil, 10p

  • Salt, 10p

  • Garlic powder, 10p

  • Chilli flakes, 10p


  1. Preheat the oven to 190°C.

  2. Boil some salty water, add the potatoes and cook for 15 minutes.

  3. Once boiled, drain the potatoes and lay them on a baking tray. Crush them with a fork, exposing the fluffy insides and drizzle with oil, salt and mixed herbs.

  4. Place the baking tray in the preheated oven and cook for 40 minutes.

  5. About 15 minutes before the potatoes are ready, cut the stalks off the mushrooms and place them on the baking tray, drizzled with oil and some garlic powder. Then put the tray back into the oven for the final 15 minutes.

  6. If you want toasted buns, add these to the oven for the last 5 minutes of cooking.

  7. Whilst you're waiting for the potatoes to finish cooking, fry up the halloumi in some garlic powder and chilli flakes until golden and crispy. 

  8. Take your buns out and assemble your burger with a lettuce leaf, halloumi and mushroom. Serve with the potatoes on the side and a source of your choice.
